Description
Our jungle pepper, also known as Voatsiperifery or Bourbon pepper, grows exclusively wild in the tropical forests of Madagascar and is harvested only in very small quantities by local smallholder initiatives. Its low annual yield of just 1.5-2 tons makes it an absolute rarity.
The earthy, warm, peppery spiciness, paired with subtle resinous and fruity, almost lemony aromas, lingers long. It pairs perfectly with game dishes, pink-roasted lamb, fish dishes, and dark sauces. It's also often paired with chocolate, which provides a nice contrast to the spiciness. Despite its characteristic small stems, it can be safely ground into a spice grinder.
